I wanted to share my favorite tip for satisfying an ice cream craving.....banana sorbet! I use an ice cream maker, but you can probably just freeze it instead, although it won't be as smooth and creamy.
Take 4 overripe bananas (the ones I would previously use for banana bread!) and mash really well with a fork. Add 2-3 tablespoons of unsweetened applesauce and flavor to taste with vanilla, nutmeg, cloves and cinnamon. Pour into a running ice cream maker and churn at least 30 minutes. Transfer to small containers, pressing down to get out any air bubbles, and place in freezer. I split them into 4 portions....each is about 110 calories, depending on the size of the bananas!
Take it one step further and heat up 1 tablespoon of natural peanut butter and pour over top.....even Elvis would've loved this!!
