Dont know if yall have found this but its AMAZING, better than real mash potatoes because they taste just as good. If you don't have a food processor its ok. But, I tried a blender and it didn't work, next time I'll cook the cauliflower a little more to see if that'll help. So I ended up just mashing it with a fork, it wasn't quite the same texture but still amazing. I used fat free cream cheese and low fat cheese to reduce calories. And I left off the butter they recommend serving it with, pointless.
And its sooo easy/cheap...

See if yall can do some calorie counting on that because I don't believe mine. I weighed out my cauliflower and got about 150 for the whole head. My package of cream cheese gave me 15 for 1 tablespoon. My cheese was messed up because I didn't have parmesean so I used 1/8 cup low fat mozzarella which I said was about 35, and 1/8 cup regular gruyere at a whopping 112. Garlic, eh, maybe 10? All in all it was about 80 calories per serving (4 servings). That just can't be right. I ate half of it as my entree and I'm stuffed for 160 calories! I can't believe it. I feel like I've gained 200 pounds. I can't wait to see the damage on my weight tomorrow because I only ate 750 calories today so there shouldn't be any but jeez if I don't feel fat right now because it was so filling.

| I love mashed cauliflower.It's my favorite thing when I have a little more time to cook than the usual "Toss cold steak or chicken on top of salad"

| Suprisingly my family really likes mashed cauliflower and they are a tough bunch to please when it comes to veggies. This is a good substitute for mashed potatoes.

| I think it's even better if you add rosemary- I usually thin mine down with broth and eat it as soup. It's a nice low calorie food since I tend to eat very late at night.
