Ok, I came up this recipe this morning. It was inspired by another thread on here where I was asking new ways to eat spinach.
This is the ingredents:
One small can of mushrooms pieces and stems
4 egg whites
2 slices of whole wheat bread
motzarella cheese 1/3 cup
I used 1/2 cup fresh spinach chopped up
one slice of red onion
pizza or pasta sauce- I used about 2Tablespoons.
Parmason cheese- 4tsps.
Ok, I took the onions and mushrooms and brown them in a skillet with fat free olive oil spray. Then I added the spinach, and egg. When the egg was done I added the motzarella cheese. Once melted, I took this and spooned it onto two slices of whole wheat bread. Then I spooned on the sauce and parmason cheese. I added some italian spice and put it in the toaster oven until the bread was toasted.
Here's an over estimation of the calories for this:
4 egg whites - 64cals
two slices whole wheat bread - 140
one small can mushrooms- 30 cal.
motzarella cheese- 1/3 cup 80 cal.
spinach- 4 cal
onion- 8 cal
sauce- the kind I used anyway- 30 cal
Parmason cheese - 40cal
Total 396 calories
Ok, now that is not to bad for a breakfast meal....Here's the pictures of it.... and it was quite tasty...

That does look really good to me. And a 350+ calorie breakfast is pretty hard to beat! I would probably skip some of the cheese though. I try to go low on my dairy intake, especially in the morning.

I was going to add you can give the egg yolks to the dogs, they are wonderful for their skin and coat. You can't give egg white raw to dogs, but the yolks are great.

Oh my god! I would eat that for breakfast every day. I have a real issue most of the time about what to eat in the morning, breakfast is the really only time of the day where I am not that hungry! Shocking, but its caused me to over eat for the rest of the day. This breakfast pizza is exactly what I need!

| This sounds like a great recipe! I'm trying to cut down on my carbs, so when I try it, I'm going to substitute the whole grain bread for Wasa Crispbread. They're a great whole grain alternative to bread and are high in protein and fiber. I actually work with the social media team and love topping Wasa with scrambled eggs in the morning. It definitely keeps me full until lunch! They're Facebook page has a $1 coupon if you'd like to try them: wasa-usa.com/recipe-wasa-with-warm-feta-tomatoes-and-herbs.aspx Last edited on 22 September 2011 09:56 pm by
