Hopefully you'll get some good replies, but I just wanted to say that I found some really great websites on the subject when I went looking for nutrition data for the Sushi Bar list for the Food Calories & Nutrition Calculator.

I suggest searching Google.

I make it:) You need a sushi mat to properly roll it (assuming you're making the rolled sushi using Nori as the paper?).

Other than that, you really don't need any gadgets.

Use short-grain (glutinous) rice. I am semi-low-carb, so I make my own sushi vinegar using plain(unseasoned)rice vinegar and adding 1 pack of splenda and 1/8tsp salt per 1/4 cup vinegar.

Son likes crab salad, cucumber and carrot in his. Just take a can of crab meat, rinse it well then squeeze the heck out of it to get the water out. Mix in 1-2T mayonnaise(as you like it) and that's it for the crab salad. Cut the carrot and cucumber (and avocado if you like) into thin strips.

For a cream cheese one, put a block of cream cheese in the freezer for 20-30 minutes to make it semi hard. Then slice into 1/8" slices, then cut those in half lengthwise so you have sort of squares. I prefer these with a little toasted sesame seeds and avocado in the roll :)
