So I made some chili today and it turned out pretty good, so here's the recipe.  It's probably not much different than most recipes, but since I calculated it out at approx. 250 cals a serving (about 1.5 cups a serve) and it has lots of fiber and a little less salt then regular chili i thought I would put it here:

1 white onion fine chopped (medium onion)
1 red pepper finely chopped (1/2 a large one)
1 pablano pepper, diced

Sweat the above out in 1 tbs olive oil.  about 10 mins.

Add 1 lb of ground turkey breast and cook through.

add the following:

1 can red beans (I used the chili beans for a little umph)
1 can kidney beans
1 can black beans
1 can crushed tomatoes
1 large can reduced sodium tomato juice (put in about 2/3 of it, hold back some until you see how thick it gets)

Stir the above together then add chili powder to taste.  I added about 1/4 cup.

Simmer for approximately 1.5 hours on low heat.

It's very tomato-y, the way I like it.   I think it would be good with a jar of salsa and some frozen corn too (but it already had enough carbs!).  I crushed a few baked tostitos on it instead of crackers.  Some sour cream would have been good - but I've had enough cals today!

Oh, and this whole thing, which will feed me all week, only cost about $10 to make.
