2 cans mandarin orange segments, drained and coarsely chopped
1/2 cup finely chopped red pepper
1/4 cup finely chopped red onion
1/4 cup honey mustard
1 tbsp lime juice
1 tbsp chopped fresh cilantro
6 boneless skinless chicken breast halves (1 1/2 lbs)
Mix first 5 ingredients; cover and refrigerate for several hours for flavours to blend.
Grill or broil chicken 5 to 6 mins on each side or until cooked through. Serve with salsa.

I used fresh parsley instead of cilantro also I only refrigerated the salsa as long as the meal took to cook and it came out great. I made this in the middle of winter and it came out like a taste of summer. Goes great with anything!
