I recently became a vegetarian, and I've been reading that a Slow Cooker is really usefull so I bought one. Does anyone have any good recipes? I would really appreaciate it.

Sorry, I love my slow cooker, but I use it for stews with meats. You can make any of your favorite bean soups, or other bean recipes with lots of vegetables. I hope others reply.

I did hear though that vegs are really not the best for slow cooking. WHen you over cook vegetables you loose all the "good" nutrients, so try and use it for your grains, beans, legumes, potatos, etc.

not necessarily a vegetarian recipe... but if you are vegetarian you are probably familiar with adapting recipes to suit your needs

I honestly don't know if this would be any good, or if it's even possible but maybe a basic soup but instead of meat use tofo with chicken broth for taste? Or use the cubes that taste like chicken broth.

You could look for recipes on allrecipes.com. I find that site very useful when cooking.
