Spinach ham quiche made with eggbeaters, yum!

You can use frozen spinach, I personally prefer to use fresh.

Take one large bag of fresh baby spinach and sautee in a nonstick pan with cooking spray until very wilted. Mix spinach, 2 slices (or 2oz) chopped canadian bacon, 2T flour with one 15 oz carton of Eggbeaters. Put in pie pan sprayed with nonstick spray and bake at 350 for about 30 to 40 minutes until lightly browned and puffy on top and knife stuck in the center comes out clean.

Low fat, low calorie, super filling and a great way to get in protein and veggie servings. You can toss in anything else you like into this recipe, like sauteed green peppers, onions, mushrooms, just about any veggie, cheese if you like that, any kind of meats etc. You could feed 8+ people with the size this becomes after cooked.
