right, im a HUGE fan of these!! i usually include parsnips, which taste like sweet potatoes, carrots, red onion and red bell peppers.
pre heat the oven to 220. chop all your veggies up, into edible chunks. also chop some fresh basil, add some rosemary, and chuck in some whole cloves of garlic (you can peel and eat if you want, but i find them sickening!). coat everything with a tablespoon (or less, trial and error here!) of olive oil, and put into the oven, uncovered, for 40 mins
voila! and they really are yummy, my boyfriend hates veggies, but he nibbles at mine the way i nibble at his chips. really he wants me to make him some, but he doesnt want to admit that he likes them!
anyway, have a go, its a great replacement for chips! (fries)

Oh I LOVE making these! I should note a couple of things...
You're using 220 degrees C. Those of us with ovens in degrees F should roast at 400-450 F.
Some other veggies I like this way - eggplant, zucchini, squash, tomatoes. I like to add the finished roasted veggies to other things like penne pasta or couscous.
If you really want to use bare minimum oil, you can spray the veggies with cooking spray.
