I saw this recipe on TV, (along with the veggie chili that Hisgal posted ) and it's so good! Check it out:
1 pound boneless skinless chicken breasts, cut into 1-inch cubes
1/2 pound chicken or turkey sausage 1 can of diced tomatoes
1 medium onion, chopped
1 green bell pepper, seeded and chopped
1 stalk celery, chopped
1 cup reduced-sodium chicken broth
2 teaspoons dried oregano
2 teaspoons Cajun or Creole seasoning
1 teaspoon hot sauce
2 bay leaves
1/2 teaspoon dried thyme
1 pound frozen peeled and cooked shrimp, thawed
2 cups cooked brown rice
Combine all the ingredients (except for the rice) in the slow cooker. If you're planning to let it cook while you're at work, put it on low. If you're planning on eating a little sooner, put it on high. Serve over rice. It's fabulous!!! I like to add a little more hot sauce, but do as you please.

Pinklady,
This sounds terrific! Do you have any kind of calorie info per serving and what a serving size is?
Thanks,
Bert

I'm sorry, but no. I don't have any nutritional information or serving size information on this recipe. I wish I did, but I just saw it on TV and she said it was pretty healthy, and putting everything in, it did look pretty healthy. I'm sorry!

Thanks, Pink.
Based on what I see the veggies and spices shouldn't be much at all. Shrimp is about 100 calories for 10 and based on the sausage and chicken, I should be able to come up with a serving size calorie count. The rice will be easy based on what the package shows.
Thanks again for this.
