This is probably old news to some (or most!), but as I was looking up healthy recipees I found a link to cooking salmon & asparagus in foil in the oven. I decided to do the same thing with a frozen breast of chicken.
I sprayed a dab of non-stick spray on the foil and put the chicken in the center. I seasoned it a little and then folded the edges so the chicken was sealed inside with a little breathing room. I put the oven on 375 and after 45 minutes I had the most tender juicy chicken I've EVER had! Now I know how chicken is suppose to taste! Usually when I do it in the oven, or on the stove it turns out hard, rubbery and tough. My knife sliced through the chicken like butter.
I highly reccomend cooking your chicken this way if you haven't tried it!

Funny that you should write this! As I am sitting here typing, my chicken breast wrapped in foil is already in the oven cooking for my dinner!
I used a bit of low fat greek salad dressing for marinade/seasoning. I was being lazy. Also yummy and healthy... lemon & pepper or soy sauce & garlic & ginger.

Those seasonings sound good! I am glad that someone else does this! Chicken has a whole new meaning to me now LOL

I tried this last night for dinner and it turned out great! I took fresh skinless chicken breast and put them into 2 foil packs. For one I included fresh asparagus, mushrooms and onions with a splash of balsamic. The other I used asparagus, mushrooms and onions as well but used a splash of soy sauce and minced ginger. My wife and I both agreed the ginger chicken was the best....
We also had a wicked wind storm here last night so right before I was going to put the packs into the oven, the electric went out. So I waited for 20 minutes or so and decided to use the grill. I kept the grill at 375f to 400f and rested the chicken packs on the top rack for about 50 minutes. Despite the wind blowing out the grill twice and the constant monitoring of the temperature, this proved to be just as good as the oven.
