I know in a typical recipe you put the ingredients all at the top, but I'm lazy, so I'm just writing this down as I do it.
1) Chop up 1/2 onion, 1 green pepper, 1 habanero pepper, 2 jalapeno peppers. In saucepan saute the chopped hot peppers (habanero and jalepeno) for about a minute add onions, saute another 2 minutes, add green pepper.
2) In large pot place a can of tomatoes (diced/whole, whatever is around - 28 ounces), 3 cans of beans (black/pinto/kidney), 1 package frozen corn (around 12 ounces), 1 large fresh chopped zuchini. Stir in hot/sauted mixture. Add chili powder to taste (I usually go for about 1/4 cup -- but I'm a spicy food addict).
3) Bring to a boil, but then let simmer for as long as you'd like (at least 30 minutes -- the longer you let it simmer, the spicier it will get).
This chili is awesome. If you aren't one for spices I'd cut out the habanero and only use one jalapeno. Also, reduce the chili powder to a tablespoon or so. All of my friends (those who like spicy food) love this recipe and dont't mind the lack of meat.Last edited on 14 July 2005 08:54 am by collegestudent
