This recipe takes less than 5 minutes to make and you can add your own touches to spice it up.

Fill one Flat Out or comparable whole grain tortilla shell with:
  • 1/2 C. fat free refried beans (microwave for 25-30 seconds until hot)
  • 1 tablesppon of your favorite salsa-you decide how hot you want it.
  • a handful of chopped lettuce
  • 1 tablespoon of sour cream (you may use regular, lowfat or fat free depending on your diet)
  • 1 oz grated cheddar cheese (again select fat content according to your diet)
Roll it up and enjoy. According to weight watchers, this is 5 points. If you want to reduce points you may drop the sour cream or the cheese (1 point each). You can also use 1/4 cup beans to reduce it by 1 point. I find 1/2 cup is very filling. I usually don't have to eat the remainder of the evening after one of these.

Other options:
  • add a few chopped olives
  • add 2-3 oz. grilled chicken
  • add chopped tomatoes
  • add hot peppers, chiles, jalapenos
I love this because it works great when I have overused my points earlier in the day. It has protein and fiber and is very satisfying. This is my secret weapon. I generally keep all the ingredients on hand, so it is convenient!:dog:

'Course, I'll be going back to school next week, and it doesn't sound much like something you can pack in a lunchbox :tongue: If only lockers had electrical outlets, and were big enough for microwaves.

But Sunday evenings, when Dad doesn't cook...Saturday lunches...

oh i love those!! :chewing:  it is so good and kills the intense cravings for chimichangas!  also really really good with 1/4 cup black beans.  delicious!  thanks for reminding me of that delicious recipe, skipperdox!
