Black Beans

Stove top/ 5 - 10 minutes

ingredients:

1 can organic black beans, (I used Westbrae?)
1 tsp olive oil
1 onion
1-2 rib celery
1 large carrot
1 - 3 tsp cumin (to taste)

Chop onion, celery and carrots into pieces about the size of a bean, saute in olive oil (add water if vegetables become to dry) until onions are translucent, and maybe a little brown.

Add cumin and stir over medium heat for 1-2 minutes.

Rinse the beans, lightly, you want some of the liquid from the can still on them.

Add to the vegetables and heat through.

I've always found that if I eat beans from a can without rinsing them extremely well i get terrible bloating and gas! Apparently the water contains a lot of the enzymes that cause the gas. So beware!

I am one of the lucky ones, I've never had problems with gas from beans, or much else either.   You can certainly rinse the beans, I just like the flavor better without rinsing.

There is an herb called epozote that is supposed to alleviate bloating.  I don't know how well it works though.

It is used almost exclusively in mexican cooking, so unless you have access to a specialty spice company like Penzey's, it may be hard to find.
