Tried this recipe last week and really liked it. This recipe is for 2 servings so adjust if you need more. I made if for 6.
3 ounces whole wheat fettuccine
1/2 cup salsa
2TBS peanut butter
1 TBS orange juice
1-1/2 tsp. honey
1tsp. soy sauce
1 cup cubed chicken breast
1TBS chopped peanuts
1TBS cilantro minced
Cut and cook the chicken breast. Cook the fettuccine as directed on the box and drain. Combine the salsa, peanut butter, orange juice, honey, and soy sauce and heat through. Add this to the chicken. Garnish the top with the chopped peanuts and cilantro. Serve over the fettucine.
I used skinless & boneless chicken breast with the fat trimmed off, 100% whole wheat fettuccine, mild salsa, all natural peanut butter with the oil drained off, unsalted peanuts, reduced sodium soy sauce, and fresh squeezed OJ. It wasn't as spicey as I would have liked and will use a hotter salsa next time. I love cilantro and used quite a bit more then the recipe called for. I think you could add various other veggies and spices to this and will do so next time I make this. Also it was really easy and quick to prepare.
