My sister cme up with this one....
Donna's Curry Split-Pea Soup
1 bag of split peas (soak for at least 1 hour)
2 onions diced
2 carrots diced small
1 Med potato cut into small 1/4” chunks
½ table spoon salt
1 table spoon Oregano
Pepper a dash or so
½ tesp Garlic paste or one clove not the whole thing
½ to 1 table spoon Curry power I use a full tablespoon and a little more (Smoked Curry if you can)
A sprinkle of Cayenne if you want to give it a kick.
5 cups of water
Cook, in a little water, the onions, garlic, and carrots until soft. Keep out one or two large spoon full in a bowel. Dice the potato and cook in water until soft. Drain and place with extra onions and carrots. Heat 5 cups of water or more and add split peas cook until almost done and add onions and carrots, less the two large spoons full, Curry power , Pepper, and salt. Cook until soft. Place in blender and make smooth. You may need to add water??? Place back in pot and add the potatoes and extra onions and carrots. Cook for 10 minutes serve.
